RecipeBrain Healthy Mediterranean Diet: Greek Omelet

Ingredients

  • 1 cup egg whites
  • 1 teaspoon of olive oil
  • 2 teaspoons chopped onion
  • 1/4 cup of chopped spinach
  • 1/4 teaspoon of oregano
  • 1/4 teaspoon of basil
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of low-fat feta cheese

Directions

  1. Coat a nonstick skillet with cooking spray.
  2. Add olive oil and onion to the skillet and cook the onion until tender.
  3. Add spinach, oregano, basil, and pepper.
  4. Mix well and cook 1 minute.
  5. Add egg substitute and stir with spatula to distribute spinach mixture.
  6. Cook on medium heat until omelet sets.
  7. Sprinkle feta on omelet and fold in half over cheese.
  8. Continue cooking to desired doneness.
  9. Serve immediately.
Makes 1 serving.
